You will learn easy recipe to feed and maintain a unique liquid sourdough suitable for panettone.
Methods to machine mix your panettone dough, prepare a chocolate ganache for chocolate dough, prepare a custard as "tang-zhong" to enhance your dough. Techniques to shape your panettone for maximum expansion and height.
Lean to analyse, select and prepare inclusions for further flavours and variety. Control fermentation, temperatures and how to bake your panettone in your home oven.
Bread theory and sourdough management will be taught throughout class.
Panettone is an Italian sweet, dome-shaped bread or yeasted cake from Milan, characterised by its fluffy, cloud-like texture and inclusion of raisins and candied fruits like orange, citron, and lemon zest. Made through a lengthy process involving a sourdough-like fermented starter and multiple days of proofing, panettone's signature tall, domed shape is achieved by hanging the baked loaves upside down to cool.

For the purpose of class, we will use 1% instant yeast to help shorten fermentation time. We do this to maximise our time together during the workshop. However, when you go home to make your own panettone, you should try to avoid using instant yeast in order to challenge yourself.

All ingredients used in class is vegetarian. No pork. No lard. Sourdough loaves are vegan. Other bakes may contain eggs, butter and dairy products. Please inform us if you have dietary concerns.
Class is not skills future accredited.We would have to extend the class beyond 7 hours and markup the price by 35% in order to qualify for funding. We simply don't believe in wasting your time and money to learn baking.
All confirmed bookings are non-refundable. You may transfer to another class that is occurring within 60 days from the original class or send a replacement participant. To transfer to another class, please give notice at least 5 days before the start of class. No refunds will be given for unattended classes. Classes may be postponed before or on class day if instructor is unwell. In the event that class is cancelled, an email will be sent to inform of the cancellation. A full refund will be given.
