This class is designed for baking enthusiasts who want to master traditional Italian panettone baking techniques, including both classic and chocolate variations, through an artisan panettone class that emphasizes authentic sourdough methods.

Participants will learn about Italian sourdough starter propagation using locally accessible ingredients, with practical instruction on maintaining starter vitality in tropical climates. The workshop provides all necessary baking tools, including mixers such as spiral, planetary, and twin-arm types, for demonstration and hands-on practice. Practical guidance covers commercial and home oven baking methods for consistent results in different baking environments.

The full-day workshop runs from 9am to 6pm, offering a comprehensive learning experience. Each participant will produce at least one classic panettone and one chocolate panettone, with a minimum of one piece per variation, allowing for detailed skill development. The class size is limited to 4 to 8 participants, promoting personalized guidance and interaction with the instructor.

The workshop fee covers all ingredients, baking tools, and equipment used during the class, along with the detailed full-color instructional booklet, light refreshments, and a simple lunch bento. Participants will receive a homemade artisan panettone (both classic and chocolate varieties), their own sourdough starter, and access to bonus video tutorials for continued practice. Personal baking accessories or additional ingredients outside those provided are not included.

Care

Participants will receive comprehensive instructions on caring for their sourdough starter after the class and maintaining their baking skills. Although the workshop itself does not include a warranty, the instructional materials serve as ongoing references for sourdough maintenance and artisan panettone baking. Proper storage and application of learned techniques will support successful future baking endeavors.

Booking policy

Bookings are final and non-refundable. If we cancel the class, you will receive a full refund. If you cannot attend, you may send a replacement student in your place at no extra charge. Rescheduling fees applies for non medical emergencies.

Online support

Exclusive invite to private online group for students only. You will continue to receive guidance as you continue your baking journey at home. You will also have life time access to all pre-recorded tutorial videos.

Dietary Concerns

All ingredients used in class is vegetarian. No pork. No lard. Sourdough loaves are vegan. Other bakes may contain eggs, butter and dairy products. Please inform us if you have dietary concerns. 

Skills Future

Class is not skills future accredited.We would have to extend the class beyond 7 hours and markup the price by 35% in order to qualify for funding. We simply don't believe in wasting your time and money to learn baking. 

Booking Disclaimer

All confirmed bookings are non-refundable. You may transfer to another class that is occurring within 60 days from the original class or send a replacement participant. To transfer to another class, please give notice at least 5 days before the start of class.  No refunds will be given for unattended classes. Classes may be postponed before or on class day if instructor is unwell. In the event that class is cancelled, an email will be sent to inform of the cancellation. A full refund will be given.
