The material of our baking steels is a food safe, low carbon steel, and virtually in-destructible. They have been pre-seasoned in a hot oven, ready for your immediate use.
Steel has 20x the heat absorption versus stone. The steel mass stores way more energy so once the steel gets hot it will stay hot for a long time. You get the performance of a traditional brick oven in a home oven. Unlike ceramic baking stones that crack easily, a steel is virtually unbreakable. Durable for life.
For sourdough and pizza bakes, a pre-heat time of 30-40mins at 250°C is required. And because the steel stays hot for a long period of time, this allows for quick back-to-back bakes. Less waiting, more baking!
Another feature that we work hard to achieve is the steels' surface finishing. Most brands on the market "sand blast" their steels for an even surface finish. However, the surface is rather rough and bumpy, quite like the surface of mass produced cast iron pans. Instead, we employ a 2-step blasting process. We first Sand blast, and then Shot blast our steels with ultra-fine glass beads. This last step ensures a smooth surface finish. Much like your vintage cast iron cookware, a smooth surface allows for a better cooking experience. Your pizzas slides better, improved non-stick properties, ease of seasoning and maintenance.
