- 1 teaspoon of salt
- ½ teaspoon of black pepper
- 1 teaspoon of dried oregano
- 1 teaspoon of dried basil
- 4 cups of vegetable or chicken broth
- ½ cup of heavy cream (optional)
- 4 slices of sourdough bread
- 1 tablespoon of olive oil
- 1 garlic clove, peeled
- Salt and pepper to taste
Cooking Instructions:
Step 1: Preheat the oven to 200℃
Step 2: Arrange the tomatoes and onion slices on a baking sheet. Then, drizzle with the olive oil and sprinkle with the minced garlic, salt, black pepper, oregano, and basil.
Step 3: Roast the tomatoes and onions in the oven for 30-40 minutes, or until they are caramelised and soft. Then, transfer the roasted tomatoes and onions to a large pot.
Step 4: Add the vegetable or chicken broth to the pot and bring to a boil.
Step 5: Reduce the heat and simmer the soup for 15-20 minutes before using an immersion blender or a regular blender to puree the soup until smooth.
Step 6: If you’re using the heavy cream, stir it in and simmer for an additional 5-10 minutes.
Step 7: Heat a pan over medium-high heat.
Step 8: Brush the sourdough bread slices with olive oil.
Step 9: Grill the bread for 1-2 minutes per side, or until grill marks appear.
Step 10: Rub the grilled bread with the peeled garlic clove and season with salt and pepper.
Step 11: Serve the roasted tomato soup hot, with the grilled sourdough bread on the side.
